Tunnbrödsrulle parmaskinka
After making lomper I of course had to buy a package of hotdogs to have some traditional Norwegian hotdogs in lomper. And then while I was in the supermarket I spotted some shrimp and thought I could maybe whip up some Skagenröra to add to the hotdogs. And then once I was thinking of Skagenröra I thought about Swedish tunnbrödsrullealso often referred to simply as Swedish hotdogs.
Tunnbrödsrulle are a popular Swedish street food made of a tunnbrödor flatbread, topped with a layer of mashed potatoes, two hotdogs, Skagenröra shrimp tunnbrödsrulle parmaskinkafried onions, ketchup and mustard. But of course living in Norway I have to give tunnbrödsrulle a Norwegian twist and make them with lomper potato flatbread instead of wheat flatbread.

However these particular hotdogs with mashed potatoes, Skagenröra, and fried onions rolled in tunnbröd have become such a popular street food in Sweden and Norway and Finland that now this is what tunnbrödsrulle usually refers to. Traditionally tunnbrödsrulle, or Swedish hotdogs, are made with wheat flatbread, however I think they taste even better with lomperor potato flatbread!
You can make lomper from scratch with my lomper recipe here. Cook up a few more potatoes with the lomper potatoes and set them aside for the mashed potatoes tunnbrödsrulle parmaskinka the Swedish hotdogs. You can make your own mashed potatoes by boiling a few potatoes and mashing with some milk, butter, and salt. Or if you want to save time you can use instant mashed potatoes instead Norwegians are actually huge fans of instant mash, so you can feel very Scandinavian when whipping them up.
You can cook them in hot water, grill or fry them, or even just microwave them. You could make tunnbrödsrulle without Tunnbrödsrulle parmaskinka, but would it still be a proper Swedish hotdog?

Add about 4 tbsp of mashed potatoes to each lompe. Sprinkle with fresh parsley.
